So the combination of this recipe may look disgusting but it’s actually one of the best sweet potatoes I’ve ever had!
All you have to do is bake your sweet potato, fry up your kale with a little olive oil, salt, pepper and lemon pepper, place your black beans on the stove to heat up and place the ingredients on your sweet potato topping it with guacamole. When I first saw this recipe I wasn’t sure I would like it because there’s so much going on at once but the taste is phenomenal and its such a healthy recipe. You could eat this for lunch or dinner and it’s a healthy meal that leaves you feeling light and refreshed. Try it out and let me know what you think!
