Vegan Dish

Hello beautiful souls,

I hope you are having a fantastic day thus far! I wanted to share a quick and easy vegan dish with you. A lot of people think vegan dishes are extremely hard to come up with but it’s actually very easy. We like to see how creative we can get and just through things together. This meal consisted of noodles, mushrooms, onions and peppers.  We made a side of black beans as well as a side of potatoes, radishes, onions, cashews, cucumbers and fresh rosemary. We just chopped them up and put them on the stove to cook. This side goes great with anything! I love mixing the nuts in with the veggies. It gives it a really unique taste.

Potatoes are also the best energy producing veggie. They are packed with vitamin C, B6, copper and magnesium. They help control blood sugar levels too. This is a great veggie to add to your diet. Try it out and let me know what you think!
