So today I thought I would change it up and share one of my favorite cookie recipes with you since I just took these babies out of the oven. It’s totally vegan and way healthier than your normal chocolate chip cookie!
What you need:
1/2 C Coconut oil- as a soft solid
1 C Brown Sugar
1/4 C Almond or Soy Milk
1 tbs. Pure Vanilla
2 C Flour
1 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp Sea Salt
1 C Vegan chocolate chips
Pre-heat oven to 350 degrees
-Cream together the liquid coconut oil & brown sugar, then add the milk alternative & vanilla.
-In a separate bowl mix the flour, baking soda, baking powder and salt.
-Combine the wet & dry ingredients, then fold in the chocolate morsels & any other mix-ins of your choosing.
-Roll into Tbsp sized balls & place them on an ungreased cookie sheet, then flatten them out a bit with yout palm.
-Bake for 7-10 minutes.
That is it! Easy right? You have officially made the best vegan chocolate chip cookies ever! I hope you enjoy your sweet treats before you get back out on your yoga mat!
